Simple to Make Three Step Keto Mashed Cauliflower

Keto Mashed Cauliflower and Brown Gravy

This simple three step keto mashed cauliflower recipe makes creating a simple side dish as easy as 1,2,3! Let’s face it, for those of us who love mashed potatoes, jumping into a Keto diet can be a bit rough if we are craving a side dish of steamy, smooth, buttery mashed potatoes. Cover them with a little brown gravy and you have heaven on a plate.

Fortunately for us, all is not lost when it comes to craving an all-American staple. What really makes this recipe wonderful is that it is ten times easier to make than mashed potatoes. There are no potatoes to peel, no waiting for water to boil and constantly sticking the potatoes with a fork to see if they are tender, and the best part is no mashing with a potato masher.

As a child I thought making mashed potatoes was sheer torture. When my mother pulled potatoes out of the pantry and announced that mashed potatoes was going to be a side dish with dinner that night, the three of us kids would scatter like the wind! No one wanted to peel the potatoes and then dig the eyes out with the peeler. And when I think back to the cooking process all I remember is boiling water and a fork being stuck into the boiling water. Finally, after they were drained my mother would take out all of her frustrations with the masher-let me tell you, that woman must have been seriously mad about life in general. All in all, making mashed potatoes was a torturous job, in my opinion.

Fast forward a few decades to the substitution of mashed cauliflower for mashed potatoes and life just got ten times easier as far as making this side dish. For my recipe you can use either microwaved florets or if you prefer you can steam fresh cauliflower and make the recipe similar to mashed potatoes of dinners past. To keep the fat content up for those on a Keto diet I like to use either heavy cream or half and half. One little kick I add are Bleu Cheese crumbles. Now if bleu cheese isn’t your thing, no worries. You can easily leave them out.

To make the mashed cauliflower you can use a potato masher, immersion blender or a food processor. Note, if using a food processor go easy when running it or you will end up with really smooth cauliflower. Also, add the heavy creamy in small portions so that the cauliflower doesn’t become runny.

Finish off with salt and pepper and top with a dollop of butter. Enjoy!

A blender or hand mixer can be used in place of an immersion blender. You can also use a potato masher if you don’t have the electric mixers.

****For creamier mashed cauliflower use riced cauliflower instead of florets.
