Joy’s Low-Carb Almond Brownie Recipe

What Ingredients Are In A Low-Carb Almond Brownie

Giving up sugar on any diet isn’t easy, but this Low-Carb Almond Brownie makes you forget you are on a diet. Bless the person who came up with the Splenda Magic Baker Brown Sugar-it has been a life saver for those of us who like to bake but can’t eat the sugar that is a part of almost every delicious recipe.

When I first made the recipe for these delicious brownies I was immediately sold on the flavor. They don’t have the heavy after taste that most sugar-free baked goods have so I could see where I would be able to eat these and thoroughly enjoy them. After making them a few times though I started to think of some variations of the recipe and the one I came up with (featured here) is one of my favorites.

Personally I love nuts, any type of nut, added to brownies. To change up the flavor of these already wonderful brownies I substituted the Almond Flavoring for the Vanilla Flavoring. The Almond Flavoring takes away the sweet chocolate taste in the brownie and replaces it with a nutty flavor-not too sweet but still flavorful.

Another add-on I did is my all time favorite of Chocolate Ganache Topping. On my other website, I share my cheesecake with ganache topping recipe. Over the years I have come to thoroughly enjoy ganache-it adds a rich, decadence to any baked good and it is sugar free. That is a win-win as far as I am concerned.

How To Make Almond Brownies

These brownies are super easy to make and literally only take about 10 minutes to prep. After melting the chocolate and butter, you add the butter mixture to the remaining ingredients, mix well and finish off by adding in the chopped almonds. The pan goes into the oven for approximately 25 minutes and then are removed to a cooling rack.

Once the brownies are cool, break up the 2 ounces of Dark Chocolate and place in a bowl. Then pour the heavy cream into a pot and place over medium high heat on the stove. When the edges of the cream start to boil pour the cream over the dark chocolate. Mix in the Vanilla flavoring and stir constantly until the chocolate melts. The cream will change color and thicken into a smooth, velvety ganache topping. Immediately spread the ganache onto the top of the brownies and sprinkle with a small amount of chopped almonds. It is literally that easy. Enjoy!

  • Pour the melted butter-chocolate mixture into a larger bowl. Add in the eggs, Brown Sugar and Almond Flavoring. Mix well.

  • When the brownie is cool and you are ready to add the ganache topping, in a small bowl place the dark chocolate (either grated or broken into small pieces).
  • Pour the heavy cream into a pot and turn the stove to medium heat. Watch the cream carefully-you don't want it to boil.
  • As soon as small bubbles form around the edge of the cream, remove the pot from the stove and immediately pour the hot cream onto the chocolate. Add 1/2 tsp. of the Vanilla flavoring. Start stirring vigorously right away so the heat from the cream will melt the chocolate.
  • When the chocolate is melted pour it over the top of the brownies. Once you have covered the brownies with the ganache, sprinkle the remaining chopped almonds on the top. Serve with whipped cream or sugar free ice cream. Enjoy!
