Easy To Make Zucchini Fritters

These Easy to Make Zucchini Fritters are soon to become a family favorite. My mother used to make these for us when I was a child anytime she wanted to change things up from our standard mashed potato side-dish. She would serve them with a dollop of Sour Cream and a large scoop of Applesauce (this was always the high point of the meal for me as a kid)-the pancakes were heaven on a plate.

What Ingredients Are In Zucchini Fritters

When I started my Keto Diet and subsequent blog, I knew that the potato recipes had to go. I was thinking about what to make in place of potato pancakes and decided to give Zucchini a try. Fortunately for me, I can get Zucchini year-round here in Florida so it didn’t take much to grab three from my local Farmers Market. I wanted to duplicate my Mom’s Potato Pancake recipe so all I need to add to this recipe was an onion, a few herbs, applesauce, sour cream and Pork Rind Panko.

Pork Rind Panko has been a staple of mine since starting the keto diet. The pork rinds have a wonderful crunch when used to bread everything from chicken to fish to seafood, and in this case they can be used not only as a breading but as a binder to hold the Zucchini Fritter together while they are frying.

How To Make Zucchini Fritters

Although these fritters are super easy to make there is one important step you can’t leave out. Zucchini is known as a hydrating vegetable, and it is actually made up of 95% water. You know where I am going here….you have to drain and squeeze out as much liquid from the Zucchini as possible before mixing the ingredients and frying them up. I can’t impress this step enough. When I attempted to make these the first time I drained the shredded Zucchini, then squeezed it out in a dish towel then I even had my husband squeeze it out. When I mixed everything together and started to fry the fritters they still fell apart. After a few attempts I was finally able to get the correct amount of Pork Rind Panko I needed to hold the fritters together and they were perfect when I fried them. If the fritters still seem too loose when you start to fry them put them back in the bowl, add a little more Pork Panko and try again. They need to hold together in the frying pan.

The easiest way to shred the Zucchini is with a food processor using the shredding attachment. If you don’t have a food processor, no worries. A box grater works just as well (and is actually what many of us grew up using). It will just take a little more muscle and time, but the end result is the same. You can do the same with the small onion although if you don’t have the food processor I would recommend just chopping the onion into fine pieces.

What To Serve With Zucchini Fritters

These fritters can be served alone as a small meal or as a side dish. In keeping with the concept of these being pretend Potato Pancakes, I served mine with Unsweetened Applesauce and Sour Cream. They can also be a side dish to Pork Chops, Grilled Chicken or your favorite Steak. I have also had these as a side dish with eggs before. They are low-carb and Keto friendly, delicious and easy to make.

Fritter Ingredients

  • 3 Medium Zucchini
  • 1 Small Onion
  • 1 tsp Minced Garlic
  • 1 Egg
  • ¾ Cup Pork Panko Breadcrumbs
  • S & P to taste
  • Olive Oil or Bacon Fat to coat frying pan


  • 1 ½ Cups Pork Panko Breadcrumbs
  • 1 ½ tsp Italian seasoning
  • ½ tsp Salt


  • Place the shredding disc on your food processor. If you don't have a food processor, get out your grater box. Cut the ends off of Zucchini and rinse before shredding.
  • Shred the Zucchini and place on a piece of cheesecloth or dish towel. Proceed to squeeze as much of the water out of the Zucchini as possible. This may take a few minutes and a lot of squeezing. You want the Zucchini as "dry" as possible. When you are done squeezing out the Zucchini place it in a mixing bowl and set aside.
  • Peel and then shred or chop the onion. (Use the shredder disc if you have a Food Processor or chop finely if you don't). Add to the shredded Zucchini.
  • Add to the Zucchini the egg, minced garlic, and pork rind panko breadcrumbs. Gently mix until everything is well incorporated. See notes below regarding the amount of Pork Rind Panko to use. This will depend on the size of your Zucchini.
  • In a shallow dish pour the remaining Pork Rind Panko and mix in the Italian Seasoning and Salt. Mix well.
  • Place a large frying pan on the stove over medium-high heat. Add the Olive Oil or Bacon Fat and heat until the oil shimmers.
  • Using a tablespoon, scoop out a portion of the Zucchini mixture and roll it into a ball. Place in the Pork Rind Panko and roll until covered. Flatten the ball of Zucchini between your hands then place into the hot oil. Fill the pan with as many fritters as will comfortably fit and fry for at least 10 minutes. You want to see the edges of the fritters turning brown.
  • After you flip them over and they are evenly browned on both sides, remove from the heat and place on a paper towel to drain the oil. Repeat the frying process until all of the Zucchini mixture has been used.
  • To mimic delicious Potato Pancakes, serve these Fritters with a side of Applesauce and Sour Cream. Enjoy!


***If the Zucchini Fritters are still to wet when you scoop them out of the bowl, just add a small amount of the Pork Panko Breadcrumbs to the mixture. You want them to hold together when you place them in the frying pan.
**If you run out of the Pork Panko while coating the Fritters just had more to the plate along with Italian Seasoning and Salt.
