Cheesy-Egg Sandwich Buns

Bring on the bread with this delicious Easy to Make Keto Sandwich Bun recipe. OK, so it’s not really bread made with flour and yeast, but when you are on a diet that doesn’t allow bread, this is the next best thing.

What Is A Keto Sandwich Bun

Let’s all be honest with each other, giving up bread is a hard thing to do. Especially if you are on a diet where bread is a major no-no. If you are Carnivore, then it is definitely out. Keto will allow some “keto” bread but honestly, even some of those have carbs in each slice. I personally have to eat less than 5 grams of carbs a day to lose weight, so this recipe and these sandwich buns are blessing.

The thing I like the most about this recipe is how easy these are to make. There are only four ingredients-that’s it. Eggs, cream cheese, shredded cheese and butter to put in your pans! These take only a few minutes to mix together and a total of 17 minutes to bake. And what is most surprising about these, is that they hold together really well. They don’t fall apart or crumble so they are sturdy enough to use for most types of sandwiches.

What to Use These Buns For

I could go on and on listing the different uses for these buns and I am sure those of you out there that enjoy cooking can add a few ideas of your own. Let’s look at what I know for a fact these can be used for:

  • Any type of sandwich made with protein and a sandwich spread and cheese
  • Hamburger or Cheeseburger
  • Any type of sandwich made with just veggies and sandwich spread
  • Grilled cheese sandwich
  • A breakfast sandwich of eggs, bacon, sausage and/or ham
  • Open face sandwich with hot gravy on top
  • Mini pizza’s made with low-sugar Pasta sauce and topped with pepperoni, mozzarella or any other topping

The bottom line is, if you had sandwiches in the past and thought you had to give them up, you now have a wonderful substitution that is practically zero carb, durable enough to hold together while you eat it and delicious too!

How To Make Keto Sandwich Buns

The nice thing about this recipe is that you can literally mix the ingredients in less than two minutes. Combine everything in a bowl then mix well with a fork or hand mixer. I love to use an immersion blender so mixing the ingredients took about thirty seconds.

You do have to butter the pans before you cook in them so I went the route of what I normally do when making Yorkshire Pudding. Place approximately 1 teaspoon of butter in each pan then place the pans on a cookie sheet and put them in a preheated 375 degree oven. Within a minute the butter will be bubbling and it is time to remove the pans and spoon the batter into each one. You don’t have to fill these to the top, I would say put about 1/2 an inch of batter in the bottom of each tin.

Place these in the oven and bake for 12 minutes. The edges should be getting nicely brown. At the 12 minute mark pull them from the oven, flip them out of the tin then turn them over and put them back in the tin then back into the oven for another five minutes. If for some reason they stick (which they shouldn’t ) to the bottom of the tin gently push them with a knife until they release and come cleanly out of each tin.

When they are done baking remove them from the tin onto a cookie rack to cool before using. I was pleasantly surprised to find that they keep well in the refrigerator to be used in the future. These buns were piled high with shredded meat, horseradish sauce and pickled onions and they did a magnificent job of holding together.

Aside from using Cheddar Cheese in this recipe it also works well with Mozarella, Swiss and even grated Pepper Jack. As long as the cheese is shredded you will be good to go. The cheese will change up the flavor, so select your cheese according to what you are serving the buns with. Try it out and enjoy!

Easy To Make Keto Sandwich Buns

Only four ingredients come together to make these delicious buns that can be used for a variety of dishes.

  • 2 Eggs
  • 2 Oz Cream Cheese
  • 1.5 Cups Shredded Cheddar Cheese
  • 4 tsp Butter


  • Preheat oven to 375 degrees.
  • Place 4" pans on a cookie sheet. Put 1 tsp butter in each pan.
  • In a mixing bowl combine eggs, cream cheese and shredded cheddar cheese. For more flavorful buns substitute plain cream cheese with garlic-herb whipped cream cheese.
  • When the oven reaches 375 degrees place the tins in the oven for one minute or until the butter melts and is bubbling
  • Take the cookie sheet out of the oven then spoon approximately half an inch of batter into each tin, dividing evenly between the four tins.
  • Place the cookie sheet back in the oven and bake for 12 minutes
  • Remove the pan from the oven and carefully turn the tins over on a cutting board or pan. Be careful the tins will be hot.
  • With tongs or a fork, place the buns back in the pan with the bottom side up and put the cookie sheet back in the oven for five more minutes while the buns continue to brown.
  • When they are done remove the cookie sheet from the oven, again release the buns from the tins on a cookie cooling rack until you are ready to use them. Once cooled these store well in a zip lock in the refrigerator if you don't want to use them right away.
  • To reheat these just drop them in a frying pan over medium heat for only about a minute on each side. They brown very nicely when you do this and crisp up even more.
